Egg and bacon crumb recipe

Ingredients for making bacon and egg crumbs:
4 cups of cornmeal or cassava flakes
4 eggs
200 grams of bacon
chopped green onions (optional)

Prepare your bacon and egg farofa by chopping the bacon into small pieces, much like the photo. For this you can use a kitchen knife or scissors.
In a non-stick skillet over low heat, fry the bacon in the fat until golden. Place on absorbent paper so that the fat is absorbed and the bacon is drier.
The next step in this recipe for egg and bacon crumbs is to beat the eggs and place them in the same pan where you fried the bacon (to enjoy the flavors and fat). Season with salt and keep stirring until you get creamy scrambled eggs - it will be very fast, less than 1 minute.
When the eggs are almost done but still a little creamy, add the manioc or corn flour and mix well. Also add the bacon and chives, mix and cook until your bacon and egg crumbs are loose. Serve right away and bon appetite!
